The primary purpose of this role is to efficiently and safely fillet, trim, sort, and prepare fish products according to company specifications and quality requirements. Employees will be responsible for ensuring maximum product yield while minimizing waste and maintaining compliance with food safety standards.

The role requires precision, consistency, and the ability to work effectively within a production team. Candidates must be capable of meeting production targets without compromising product quality or food safety requirements.

Key Duties and Responsibilities

The successful candidates will perform a variety of duties related to fish processing and production operations.

Fish Grading and Filleting

Employees will be responsible for ensuring that fish products are correctly graded, sorted, and filleted according to company procedures.

Key tasks include:

  • De-icing and washing fish products.
  • Grading fish according to specifications.
  • Marking and organizing bins appropriately.
  • Sorting graded fish products.
  • Re-icing fish where required.
  • Storing fish correctly in chillers.
  • Filleting fish accurately and efficiently.
  • Applying proper trimming techniques to maximize product yield.
Production Targets

Filleters will be expected to support production objectives while maintaining product quality and food safety standards.

Minimum Requirements

Experience Requirements

Applicants should preferably have previous experience within seafood processing, fish processing, or manufacturing environments.

Preferred experience includes:

  • At least 2 to 3 years of work experience in fish processing, seafood processing, or FMCG manufacturing environments.
  • Experience in fish filleting.
  • Experience using processing knives safely and effectively.
  • Knowledge of different fish species.

Flexibility Requirements
